Make an apple sauce from apple wedges with a
few spoons of water and a little sugar or
sweetener.
Season with some lemon juice and mix until
creamy.
Cut thin strips from a slice of bread and fry in oil
until golden brown. Season the sour cream with
salt and pepper.
In sombrero style dinner plates: a spoonful of
apple sauce with a slice of salmon turned into a
rose. On the side a dash of sour cream, a
spoonful of balsamic pearls, a piece of toast, a
sprig of dill and a shredded pipe onion.
