The composition of the game dish can
depend on the preferences of your guests or
on what is on offer at the moment. Here, we
chose minced reindeer, doe burgers, wild boar,
partridge, pheasant and wood pigeon. Fillet of
hare's back is missing from this list, but it goes
perfectly with it.
The side dishes. Chosen are apples
marinated and stewed in Sauternes, peeled
pears poached in red wine with cinnamon and
a pinch of sugar, cranberry compote, steamed
Brussels sprouts, slices of cooked sweet
potato, fried endives and a mix of chestnut
mushrooms and wild mushrooms.
The guests can choose whether to put the
vegetables that are already cooked and served
hot on the plate or not.
