Make a marinade of onion, celery, carrot,
garlic, bay leaf, sage, rosemary, thyme, juniper
berries, cloves, peppercorns and red wine. Let
the meat marinate for one hour and then dry it
with kitchen paper. Sieve and save the
marinade.
Remove the leaves and sprigs from the herbs.
Bring the marinade to the boil and skim off.
Roll the meat in the flour. Brown it in butter. Add
the meat to the boiled marinade and add
gingerbread, game stock and canned
tomatoes.
Season with pepper, salt and a dash of
balsamic vinegar. Leave to simmer until
cooked.
Serve with red cabbage with apples, baked
celeriac with fried parsley or a potato
preparation.
