Mix the ricotta with sugar, yoghurt, a dash of
lemon juice and lemon zest.
Mix the raspberries in the blender. Sieve, warm
up with cinnamon, ginger and sugar until
dissolved.
Spoon the ricotta into flat wide glasses on top
of a mirror of the coulis. Finish with halved
strawberries and mint.
