with mango
and mascarpone
pure chocolate
2 egg yolks
10 cl Marsala wine
4 tbsp sugar
Beat the egg yolks with the sugar until white.
Mix with mascarpone and Marsala until
homogeneous. Spoon the mixture into a piping
bag.
Shave a bar of dark chocolate and spread the
shavings on a dessert plate.
Using the mandolin, cut very thin slices of a not
too ripe, peeled mango. Make a wide strip with
the slices, in the center of the plate, on top of
the chocolate.
Pipe a line of mascarpone mixture in the center
and arrange a few pretty blackberries on top.
