Process the chestnuts with chopped onion,
crushed garlic, leek rings, herbs and vegetable
stock in the soup machine into soup. Sieve the
soup. Or, in an ordinary kettle: make soup from
the ingredients in the classic way. Blend and
sieve the soup. Mix with cream.
Pour the soup into small pre-heated pots.
Finish with some Parmesan flakes and a tuft of
parsley.
If desired, sprinkle on some grated nutmeg.
