Just overcome your cold feet and throw
yourself into it. The combination of
mussels and blue cheese seems bizarre,
but it gives a perfect harmony of taste
experience. Anyone who understands food
pairing will have a plausible explanation
for this, I think.

Cut the onion into slices and boil them for 2
minutes in a little water with mussel seasoning.
Add the cleaned mussels and cook for about 5
minutes on high heat until they are open. Shake
regularly.
Remove the mussels from the cooking liquid
with a skimmer and keep them covered in a pot
in an oven at 85 °C.
Sieve the cooking liquid. Reduce a bottle of
cream with the same quantity of cooking liquid.
Now stir gorgonzola through the preparation on
a low heat until you have a smooth sauce. Do
not let it boil again.
On the plates: a spoonful of mussels, a
spoonful of sauce on top and finish off with
chopped parsley. Preferably serve with a
baguette.
Variation: add a glass of white wine when
cooking the mussels.
